The recipe posted is very, very good. However, you may try making the mayo from scratch. Bottled mayo lacks the zip of fresh lemon and dejon. Try the recipe below for mayo (actually a garlic aioli).

3 garlic cloves, chopped
1 large whole egg (or 2 egg yolks)
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
2 turns freshly ground white pepper
1/2 cup olive oil

Using food processor or blender, combine all ingredients except oil for 45 seconds. Add the oil in a slow stream at high speed and continue to process until the mixture has formed a thick emulsion.

Add:
1/4 Cup Mae Poy sweet chilli sauce
1/2 tsp Siracha
Optional addition:
1/4 tsp of lightly toasted white sesame seeds and a couple snips of fresh chives.
