Funny you posted this, I was scouring the internet looking for a recipe for this after I had it at Souplantation. This is what I found and made - it tasted just like it!

COCONUT CABBAGE SLAW (LIKE SWEET TOMATOES)

3 cups angle hair shredded cabbage
1/4 cup mayonnaise
1/4 tsp salt
3 tsp sugar (although I think they may have used more at Souplantation/Sweet Tomatoes)
3 tbsp heavy (whipping) cream
half a fresh pineapple chopped with the juice
1/2 bag sweetened shredded coconut

Mix it all together and you're done! Tastes more like a dessert than cole slaw!
