HARMONY FARM B&B STRAWBERRY MUFFINS

1 1/2 cups all-purpose flour
1 cup sugar
2 teaspoons cinnamon
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
2 eggs
1 teaspoon almond extract
10 ounce frozen strawberries, chopped into chunks, including juice
1/2 cup chopped almonds

1. Preheat oven to 350 degrees F. Grease a 12-cup muffin pan.

Combine flour, sugar, cinnamon, baking soda, baking powder and salt in a mixing bowl.

In a separate bowl, pour in oil and beat in eggs and almond flavoring; add to dry ingredients. Gently fold in strawberries (including juice) and almonds (or sprinkle muffins with almonds before baking). Spoon batter into prepared muffin cups.

Bake 22 to 25 minutes.
