LUBY'S SHREDDED CARROTS
1 cup plumped raisins* 1 cup. crushed pineapple, drained (reserve juice for plumping raisins) 2 lbs. whole carrots, peeled and shredded (or 1.6 lbs peeled, shredded) 1 cup mayonnaise 1/2 cup powdered sugar
Combine carrots, pineapple, mayonnaise, raisins and sugar.
Chill until ready to serve.
*Soak raisins in water or pineapple juice to plump, then drain.
