When I lived in Dallas, I tried to copy this recipe, and used something very similar to what was posted here. At Houston's, I spoke with a manager about it and, as Rockville MD said, his hint to me was that I wasn't marinating long enough--- he said, "Try at least 3 days." It worked!
Also, I used to use frozen pineapple CONCENTRATE, undiluted, to get a stronger pineapple flavor. Pineapple juice never seemed to be quite enough, even after 3 days. |
