Strawberry Fresco - menu description

It would be easy enough to add alcohol to any of the recipes. All of them are non-alcoholic.


AGUA FRESCA WITH VARIATIONS

Makes about 2 1/2 quarts

"Refreshing waters" are popular drinks served in all parts of Mexico. Any type of fresh fruit (and cucumber!) can be used.

3 cups fresh fruit (see below) chopped coarsely
6 to 8 cups water
1/2 to 3/4 cup sugar
1/4 cup lime juice (optional)

Add fruit and 2 to 3 cups of the water to a blender. Puree well. Strain through a sieve into a large pitcher.

Add rest of water and ½ cup of sugar and stir well. Add more water and sugar as needed (and lime juice, if using). Serve well chilled.

VARIATIONS:

Agua de Melon: Use cantaloupe or any other melon.

Agua de sandia: Use watermelon.

Agua de fresa: Use strawberries.

Agua de papaya: Use papaya (and the lime juice).

Agua fresca de pepino: Use peeled, seeded cucumbers and lime juice. Cut down on the sugar.


STRAWBERRY AGUA FRESCA

Servings: 6, makes 8 cups

"Spanish for "fresh water", agua fresca is a refreshing, fruit-infused drink that is served throughout Mexico. Depending on the ripeness of the berries, adjust the amount of sugar for desired sweetness. Frozen strawberries would be fine in this. I like this with 2-3 times the water or seltzer water for a thinner drink. I also increase the sugar."

4 cups water
1/3 cup sugar, more to taste
6 cups strawberries, hulled
1/4 cup fresh lime juice (about 2 limes)

Combine water and sugar, stirring until sugar dissolves.

Place strawberries in a blender, and process until smooth.

Combine the sugar mixture, strawberry puree, and juice; stir well.
