I know that this recipe may have came directly from the CPK cookbook, and everyone else who posts this same recipe on different websites are all wrong. It is not red onions that they use. I eat this every time I go to CPK; it is my absolute favorite dish. But they use SHALLOTS, not red onions. It has a distinctly different taste (shallots).
