LIME GELATIN SALAD

"This recipe is not from the Luby's 50th Anniversary Recipe Collection, BUT it tastes exactly the same to me...oh so 70's, but still very good!"

1 (3 ounce) package lime-flavored gelatin
1 cup water boiling
2 cups miniature marshmallows
1/2 cup cold water
1 (3 ounce) package cream cheese, room temperature
2 tablespoons real mayonnaise
1 (20 ounce) can crushed pineapple, packed in its own juice, undrained
1/2 cup pecans, chopped
1/2 cup heavy (whipping) cream, whipped
Lettuce leaves (for serving)

Combine gelatin, 1 cup boiling water, and marshmallows in a large bowl and mix until gelatin is dissolved and marshmallows are melted. Stir in 1/2 cup cold water. Chill until consistency of syrup.

In a separate bowl combine cream cheese, mayonnaise, pineapple with juice, and pecans. Stir into gelatin mixture.

Fold whipped cream into mixture and pour into 6-cup ring mold or individual molds. Chill until set, about 4 hours.

Unmold salad onto a large serving platter and surround with lettuce leaves.
