PARGO'S SOUTHWESTERN QUESO DIP

jalapeno jack cheese, shredded (do not buy preshredded)
chopped red bell pepper
frozen chopped spinach, thawed and well drained*
milk**
tomatoes, chopped
scallions, chopped
sour cream (for decoration)

Combine cheese, red pepper, spinach, and milk stirring constantly until smooth and creamy. Add tomatoes and scallions. Top with sour cream upon serving as decoration.

*Make sure spinach is completely defrosted and free of water

**For every pound of cheese use 1/2 cup of milk.
