Hello, I saw the Bobby Flay Cheesecake Throwdown episode on the FoodNetwork. Since I work in NYC, I was easy for me to hop on the subway and try it first hand at the resturant. Better then I expected. I then came home and was deliberate in trying to recreate it at home.

I followed the recipe exactly and used Callebaut Dark Semi-Sweet melted chocolate as directed. Not even close!! I went back to the DVR to see where I might have gone wrong. The only thing I noticed was that Alan used a portion of Margarine which is omitted in the recipe and even in the Book from the resturant. So I made it again. No iprovement!!! The video shows a dark and almost black frosting almost a ganche color. Mine came out almost milk chocolate in color. What can you advise me to do or what adjustments I can try??? I'm terribly committed to get it right.

Finally, I have the cake and the cheesecake layers all set, all I need now is the frosting. I'm so close.
