The 3 cups of wine was a bit overpoweringly "alcoholic" and I backed mine off - I would recommend 2. I remade the dish a second time with less alcohol and it was better - however, I feel something is lacking - the idea about the egg wash sounds good - but the sauce needs a litte something - otherwise the recipe is close.
