KAELIN'S RESTAURANT MEAT LOAF
1 pound ground veal 1 pound ground pork 1 pound ground beef chuck 1/4 cup onion, peeled and chopped 1/4 bell pepper, seeded and diced 2 tablespoons A1 sauce 2 tablespoons Heinz 57 sauce 1 teaspoon Worcestershire sauce 12 saltine crackers, crushed 2 eggs Meat loaf Glaze (recipe follows)
Heat oven to 350 degrees F.
Mix together all meatloaf ingredients in a large bowl until well blended. Shape into a loaf, place in loaf pan and bake 1 hour.
Cover top with glaze. Continue to bake another 30 to 45 minutes, until juices run clear in middle.
Serve with more of the glaze.
MEAT LOAF GLAZE Makes 2 cups, enough to use as a barbecue sauce as well
1/2 tablespoon crushed red pepper 1 cup ketchup 1/4 cup brown sugar 1/4 cup honey 1/4 cup Heinz 57 sauce 1/4 cup A1 sauce 1 teaspoon Worcestershire sauce 1/2 cup molasses Tabasco to taste
Combine all ingredients in a sauce pan and bring just to a boil, stirring well to blend.
