Walker's Wood is a hard to find and popular Marinade, Seasoning and Rub brand made by locals of a village named Walker's Wood in Jamaica. Hop's Restaurant and Brewery use Walker's Wood products in their most popular dishes of Walker's Wood Shrimp and Walker's Wood Salmon. You can find Walker's Wood products online for purchase and in World Market sometimes. But instead of paying $7.00 for a small bottle, you can easily make your own. This copycat recipe follows the ingredients list on a bottle of their marinade and is pretty close to exact. It is very spicy but it's correct. If you wish to make a copy of their Walker's Wood Seasoning, just leave out the water.
WALKER'S WOOD JAMAICAN JERK MARINADE (copycat)
1/4 cup water 2 oz. green onions, sliced (scallions, spring onions) 3 whole red Habanero Peppers (leave seeds in) 1 tsp. salt 1 tsp. white granulated sugar 1/2 tsp. freshly ground black pepper 1/4 tsp. allspice 1/4 tsp. ground nutmeg 1/4 tsp. citric acid (check your asian grocery or buy online) 1/4 tsp. ground thyme
Add all of the ingredients to a food processor and puree for a couple of minutes.
