Preheat oven to 350* Make crust by conbining graham cracker crumbs, melted butter, and 1 tbsp, sugar in a med. bowl mix lightlyjust enough to cover the graham cracker with butter. Press crumbs into a spring-form pan 2/3 of the way up the sides of the pan.Bake crust for 5 mins and set aside
In a large bowl combine cream cheese,1 cup of sugarand vanilla. Mix well with a mixer until smooth. add pumpkin, eggs, cinnamon, nutmeg and allspice, beat until creamy. Pour into spring-form pan and bake for 60 to 70 mins. the top will appear alittle darker, remove from oven and allow to cool, then refrigrate. cut after chilling into 8 servings and top with whipped cream
