You may use fresh potatoes, after you have shredded them make SURE you ring the moisture out of them and cook them in HOT oil so you get a good crunchy brown on them. The frozen ones I have found aren't as good....... unless you find an off brand with square edges, strange but true the rounded frozen ones just don't taste right, maybe that is what your problem is.
