Banana Pudding

1 Large bag of Jacksons vanilla wafers (This recipe is on bag)
1/2 cup sugar
4Tbls.flour
1/4 tsp.salt
1 lb.bananas(3or4)
2cups scalded milk
2 eggs(seperated)
1/2 tsp.vanilla
1/4 cup sugar for meringue

Mix flour,1/2 cup sugar and salt in top of double boiler;slowly stir in the hot milk and cook until mixture thickens ,stirring constantly.(don't overcook or your pudding will be to thick it will thicken more as it cools)Stir in a little of the pudding into the beaten yolks and pour back into the pudding.Cook about 2 minutes more. Remove from heat,add vanilla and cool until just warm. Alternate layers of pudding and bananas and wafers.
Meringue:Beat the 2 egg whites till foamy.Add 1/4 sugar gradually beating until stiff peaks form.Bake in 400" oven about 8 minutes or till golden brown.You don't have to put meringue on it if you don't like it.This pudding is the best I've ever tried.It may look like it's hard to make but it's not.
