Carmael Apple and Pecan Bread
1 1/4 cups water 2 tablespoons margarine, softened 4 cups flour 1/3 cup packed brown sugar 1/2 teaspoon ground cinnamon 1 1/4 teaspoons salt 2 teaspoons bread machine yeast 1/2 cup chopped unpeeled apple 1/2 cup coarsely chopped pecans, toasted*
Place all ingredients except apples and pecans in the bread machine pan in the order recommended by the manufacturer. Select the sweet or basic/white cycle and use the medium or light crust setting. Do not use delay cycle. Add the apples and pecans at the beep signal or 5 minutes before the end of the last kneading cycle. Cool bread on a wire rack. Makes a two pound (16 slice) loaf.
*To toast nuts: Bake nuts, uncovered, in a shallow, ungreased pan at 350 degrees about 10 minutes, stirring occasionally, until golden brown. Or, cook in an ungreased, heavy skillet over medium-low heat 5-7 minutes, stirring frequently, until browning begins, then stir constantly until golden brown. |
