I just made Dean Ornish's Carrot Cake with Cream Cheese Frosting from his Everyday Cooking with Dr. Dean Ornish. It's great. It's a dense cake, it got done before time was up in my oven, 6 minutes early. I took it out when it was getting dark brown around edges and was firm to touch. Next time I will add some golden raisins. I used a 9 inch cake pan instead of the pie pan called for.-Micha
