BAKED CUSTARD

2 medium eggs
2 to 3 tablespoons sugar
3/4 cup hot milk
1/4 teaspoon pure vanilla extract
Nutmeg

Preheat oven to 350 degrees F.

Beat eggs and sugar together until well combined, about 1 minute. Pour hot milk over in a slow stream, mixing constantly. Add vanilla.

If you have a sieve, pour custard through it into 2 custard cups (1/2- 3/4 cup capacity). (This gives a smoother texture; you can just pour egg mixture into cups directly.) Sprinkle surfaces with grated or ground nutmeg.

Place cups in a deep baking dish large enough to hold them comfortably and pour boiling water halfway up their sides.

Place dish in preheated 350 degree F oven and bake 25-30 minutes, or until knife inserted in center of custard comes out clean. Cool, then refrigerate before serving.
