Volcano Fish

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 catfish fillets juice of 1/2 lime lightly salted water juice of 1/2 orange juice of 1/2 lime 2 tablespoons brown sugar 1 tablespoon butter 1 to 2 habanero peppers -- finely chopped 2 cloves garlic -- minced dash lemon bsail or dried cilantro salt and pepper to taste
Marinate fish in the juice of 1/2 lime mixed with enough lightly salted water to barely cover the fish, overnight. Combine all ingred. except fish in a skillet. Add marinade from fish. Bring mixture to a boil over med. heat, stirring frequently. Reduce heat to low, add fish fillets and cook, basting with the sauce, for 10 min. Serve hot.
