MEXICAN TLAYUDA

2 (6-inch) corn tortillas
1/2 cup refried beans
4 ounces shredded chicken, beef or pork
2/3 cup chopped cabbage
1/2 cup grated Monterey Jack cheese
2 tablespoons salsa

Preheat oven to 450 degrees.

Spread 1/4 cup refried beans on each tortilla. Top each tortilla, in order, with half of meat, cabbage and cheese. Place tortillas on cookie sheet or in roasting pan.

Bake for 6 minutes or until tortillas are crisp and cheese is melted. Remove from oven.

Top each with 1 tablespoon salsa. Serve.

Makes 2 servings
