I make this all the time. It is easy and very good. Nice leftovers.

Preheat you oven to 350-degrees. Take a whole chicken, about 3-1/2 pounds, rinse with water and pat with a paper towel. Sprinkle salt and pepper in the cavity. Cut a lemon in half and place in the cavity. Place in a pan and set in the oven to roast for 1-1/2 hours.

Cut up several potatoes into chunks about one inch across. Place in a pan. Drizzle with about 1 Tablespoon oil (olive oil is best). Sprinkle with salt and pepper. Add 3 cloves of coarsley chopped garlic if you like. Place in oven and roast along with the chicken, stirring from time to time. Cook 1 to 1-1/2 hours.

Take 2 handfuls of fresh green beans and cut into pieces about 1-1/2 inch long. Boil water in a medium sixed pot, and add the green beans. Simmer for about 7 minutes. Drain and set aside.

When chicken is done, let sit for about 5 minutes while you finish the green beans. Melt 1 Tablespoon of butter in a saucepan, add the beans and stir until heated. Add juice of 1/2 a lemon. Serve.
