Every time I make this recipe for new people I have another convert. The best part of it is the dressing. I usually buy already cooked chicken and that saves time. You can also buy the bacon already cooked and crumbled. Hope you enjoy this.

BLT Chicken Salad

Dressing:
1/2 cup mayonnaise
1/4 cup commercial barbecue sauce
2 tablespooons grated onion
1 tablespoon lemon juice
1/2 teaspoon pepper

Salad:
2 large tomatoes, chopped
8 cups torn leaf lettuce or iceberg lettuce
3 cups chopped cooked chicken
10 slices bacon, cooked and crumbled
2 hard-cooked eggs, sliced

Combine mayonnaise, barbecue sauce, grated onion, lemon juice, and pepper in a small bowl; stir well. Cover and chill dressing mixture thoroughly. (At least a couple hours)

Press chopped tomato between several layers of paper towles to remove excess moisture.

Arrange lettuce on individual salad plates; top each serving with tomato and chopped cooked chicken.

Just before serving, spoon dressing mixture over salads; sprinkle with crumbled bacon and garnish with egg slices.

Makes 4 servings.
