Beef Hash

1/2 C Leftover Beef Roast -- Diced
1/2 C Beef Gravy
1 1/2 Tbsp. Instant Mashed Potatoes Mixed With
1/4 C Hot Water
2 Tbsp. Milk
1 Tsp. Butter Or Margarine
1/4 Tsp. Salt
1 Tsp. Worcestershire Sauce
1/2 C Leftover Vegetables -- Optional

Mix beef with gravy in 2 C. bowl. Blend instant mashed potatoes with hot water, milk, and butter in small bowl or cup. Add salt, worcestershire sauce and vegetables; mix with beef. Pour into 1 1/2 C. casserole. Bake at 350 until warmed through. yield 1 serving.

Chili

1/4 Lb. Ground Beef
8 Oz. Can Kidney Beans -- Drained
16 Oz. Can Tomatoes -- Cut Up
1/4 Tsp. Salt
1/2 Tsp. Chili Powder
2 Tbsp. Instant Minced Onion

Brown meat; add remaining ingredients; mix well. Bring to a boil; cover and simmer for 20 minutes, stirring occasionally. Better Homes and Gardens Cooking for Two - 1968

Easy Baked Pork Chop

1 Pork Loin Chop -- 3/4 Inch Thick
1 Tbsp. Sour Cream
2 Tsp. Brown Sugar
1 Tsp. Chopped Onion
1/8 Tsp. Salt
Dash Pepper

Place pork chop in baking dish with cover. Mix together sour cream, brown sugar, onion, salt and pepper in small bowl or cup; then spread over pork chop. Cover. Bake 350 for 45 min. Remove cover and bake until golden brown.

Individual Pot Roast

6 Oz. Boneless Beef Chuck
1/2 Lemon
Prepared Mustard
Salt And Pepper
Worcestershire Sauce
Sugar
2 Tbsp. Dry Red Or White Wine -- Optional
1 Sm Onion -- Sliced
1 Sm Carrot -- Quartered
1 Sm Potato -- Halved
1 Turnip -- Optional
1 Zucchini Squash -- Optional

Trim all fat from meat; then place in center of 12 " piece of aluminum foil in bottom of shallow baking pan. Rub meat with cut surface of lemon; then spread both sides with mustard. Preheat broiler; then brown meat on both sides. Remove from oven, squeeze remaining juice from lemon over meat and sprinkle alternately with salt, pepper, worcestershire sauce, sugar and wine. Add onion and vegetables of choice. Bring foil over meat and vegetables; seal all edges to make airtight. Bake 325 for 2 1/2 hours or until meat is tender.
NOTES : All vegetables are optional, use just what you like.
