Just an idea Melissa, My mom used to make up some extra stuffed peppers and freeze 2 or 4 of them for later use. I know she used the recipe on the Spanish Rice a Roni and added canned tomatoes and ground beef. Then poured tomato juice over them when she baked them. I used the Spanish Rice a Roni with the canned tomatoes and ground beef but I chop up 1 to 1 1/2 green peppers instead of stuffing the peppers as we don'tlike the big chunks of peppers. |
