Just thought of another one that might be good. It will also yield 2 meals.
1 1/2 cups uncooked penne pasta 26 1/2 oz. can of any flavor spaghetti sauce 1 c. mozzarella cheese
Cook pasta according to package. When done, drain and return to pan. Pour in sauce and heat through.
The first night you can eat it as is. The next time, reheat (pan or microwave) and put in a baking dish. Sprinkle mozzarella cheese on top and heat in a 400 degree oven for about 15 minutes or until cheese melts. It's kind of a lazy lasagna!
For variety, you can add 1/4 pound cooked, crumbled ground beef or italian sausage. You can also add mushrooms, onions or zuchini that has been cooked in some butter on low until veggies are tender.
