QUICK CASSOULET

QUANTITY 2+

INGREDIENTS
1 lamb steak
1 pork chop
1 small onion
1 crushed clove garlic
2 15 oz cans cannellini (white kidney) beans
1 tbls ketchup
½ tsp chili powder
1 pinch thyme
1 cup water
1 slice bacon

TOOLS
small deep casserole or 1 qrt crock pot

PREP
cube the pork chop & lamb steak

DIRECTIONS
Saute sliced onion & garlic & chopped bacon in oil.
Add meat & bones and saute until pan drippings in a
casserole with the drained beans.
Add 1 cup water
bake350 40 minutes

CROCK DIRECTIONS
use 1/2 - 3/4 c water or broth
5/6+ hours at low, even better at 11 hours.

this dish is better reheated, the longer it cooks the better it is.I stole this from james beard years ago...and cut it down from a huge size.
I can't get it down to 1 can of beans..unless you want to use only 1 chop, but then it's not really cassoulet.
