This makes an excellent summer dinner accompanied with fresh fruit and pasta.
1 hoagie roll 3 roma tomatoes, seeded and chopped 1 clove garlic, minced 3 leaves basil, chopped 1 Tbsp. olive oil salt and pepper to taste
Mix everything but the bread in a medium bowl and toss to combine. Set aside. Split the hoagie roll and place cut sides up on a baking sheet in the oven. Bake at 300 until crusty and light brown on top. Spread the tomato mixture on the bread and enjoy.
* I buy the rolls on sale and keep them in the freezer until I need them. They can go directly from freezer to oven. |
