I was poaching some eggs one morning and had trouble with a couple yolks that broke. I removed the broken egg from the pan and whipped them together to make scrambled eggs instead of poaching them. After whipping them and adding some seasonings, I thought, what if I put them in the poaching pan? Well- they turned out wonderful.

Big Kahuna's Egg Specialty Breakfast
2 large eggs
1 tsp milk
2 pinches lemon pepper or seasonings to taste
2 tbsp. butter
optional toppings:
salad size shrimp, approx 15
grated cheese
sausage, cooked and crumbled
vegetables, chopped finely

Put water in poaching skillet and heat for boiling. In a small bowl, whip eggs, milk, and seasonings until throughly mixed and foamy. Once water is boiling, turn down heat to simmer. Add butter to all four egg poaching cups. Once butter is melted, add egg mixture. Cups should be about half full. If desired add one optional topping. Cover with lid and let cook for 5-10 min. Don't worry- it's almost impossible to burn. When done, they will be very inflated when the lid is first removed. Serve with toast and orange juice. :o)'
