I don't know how "traditional" this recipe is, but it's the only one I make - and it's delicious!!

Vegetable Quiche (From "Gracious Goodness...Charleston")

2 tbsp butter or margarine
1 pkg frozen chopped spinach or broccoli, thawed
1/2 tsp salt
Dash white pepper
1/2 tsp dill weed*
1/2 tsp shallots, dried*
3 eggs
1 cup heavy cream*
8 oz (2 cups)Swiss cheese or Cheddar cheese, grated (or combo of the two)
1 9-inch deep-dish pie shell
Parmesan cheese

Melt butter or margarine in skillet. add thoroughly drained spinach or broccoli, salt, pepper, dill weed, and shallots; cook until tender. Set aside.

Whisk eggs and heavy cream together; set aside.

Place cooled vegetable mixture in pie shell; sprinkle grated cheese over top. Pour in liquid mixture and sprinkle Parmesan cheese on top.

Bake at 350 degrees for 30-40 minutes, or until golden brown and firm.

Serves 8.

*Substitutions: I use a hearty amount of dill weed, simply because we love it.
I use freeze-dried onions in place of the shallots. I just add them toward the end of the saute process. I substitute 1 cup of fat-free evaporated milk for the heavy cream.
