BAGEL BREAD PUDDING
Source: Cooking for David: A Culinary Dialysis Cookbook by Sara Colman RD, CDE and Dorothy Gordon BS, RN.

nonstick cooking spray
2 medium-sized bagels
1 cup nondairy creamer
1/2 cup low cholesterol egg product
1/2 cup sugar
1 teaspoon cinnamon

Spray a 1-1/2 quart baking dish with cooking spray.

Break bagels into small pieces and place in baking dish.

Mix together nondairy creamer, egg product, sugar and cinnamon together, then pour over bagel pieces. Set aside for a few minutes until the bagels absorb the liquid.

Place in a 350F oven for 30 minutes and bake until browned on top.

Serve warm or cold.
