Hi Heather. Are you from Kansas. I am too. We do a lot of camping, but in a camper. How about taking a nice beef roast, put it in your crockpot, with seasonings, and cook all day. When done. Remove the fat, take 2 forks and pull it apart. Place the meat in a pan, and add your own barbeque sauce. Heat thouroughly. To take along, freeze in freezer bags, the quantity that you need. This should keep on ice, and you could have BBQ Beef Sandwiches. Sounds good to me..... And, it would be quick and easy after a long day of canoeing. Hope it works.....
