We've done this several times and it's fun and delicious! If you don't know anyone who does this for hire (or a friend), contact your local Fair Board and/or Pork Producers Association. They should be able to give you some contact names. Do you know anyone who raises hogs? They may know some people too. Once we did it the 'pit in the ground' method, but it's just as good with the right equipment on top of the ground - and not the hard work for you that takes many hours.
