I really enjoyed reading the comments - it brought back memories --- NOT a roast - but a stuffed suckling pig. Back in the late 50's - early 60's we were living in the Mediterranean area for a number of years.

One of the magazines (Ladies Home Journal, McCalls - I've forgotten which) had a recipe for a sucking pig with a chestnut brandy stuffing. Our next door neighbor and her family (natives of the country we were living in) had a big pork market at the big open air market in the city -- in fact the ONLY pork market at that time). I asked her if she could get me a pig -- I've forgotten the poundage - but it was a little less than our son weighed (he was just about a year old).

So we planned a party and got the pig. I'd first put Tony (son) in the oven when it wasn't on - and he fit so I figured the pig would! Ha -- they were not shaped at all alike! At that time many of the natives did not have ovens and would bring things to bake (roasts, stuffed tomatoes, etc.) to the local bakeries and they'd do the baking. So ...here I am with the little maid we had walking 3 or 4 blocks to the bakery carrying this big big pan with the stuffed pig.

It turned out delicious -- and we did the same thing the following year. Luckily we had a friend who knew how to carve big things like this. I've thought about this off and on - and hopefully (as I go thru boxes of papers, clippings, etc. ..... over time) I'll come up with that recipe yet again. Doubt I'll make it -- but it still brings memories.
