Hi Cher - I don't know if there is just one way to do beef ribs (just like pork ribs). I looked in a couple of my books and online bookmarks, and saw one recipe that steamed them for 20 minutes before finishing over direct heat on grill. I saw one that baked them at 350F for one hour before finishing as above. I also saw one for cooking slowly entirely on the grill over indirect heat. Looks like it's your choice!
