Kathy - This is a simple -- easy and tangy. Since this cut goes on sale for only 99 cents per pound so often now, it makes an economical meal.

Season country ribs well with salt and pepper and a little garlic powder (or sprinkle with your favorite dry rub). Place on a rack over a baking pan (or use a broiler pan). Very thinly slice lemons and onions and spread over top of meat. Bake in a slow oven (325F) for about an hour. Then I get rid of the rack and the accumulated fat in the pan, put the onion and lemon on the bottom, coat the ribs with my favorite barbecue sauce, and place on top of the bed of lemons and onions. Turn up the heat in the oven (I do 375F) and finish until done to your liking - or finish on the grill (without lemons and onions). The lemon adds a great tang!
