GRILLED HALIBUT PAPILLOTE
4 halibut steaks (marinated, if desired) 1 large carrot, pared and sliced 8 lemon slices 1 red pepper, julienned 2 shallots, peeled and chopped juice of 1/2 lime salt and pepper to taste 20 basil leaves, chopped 8 pats butter
Heat grill to medium-hot.
Place each halibut steak on a double sheet of aluminum foil. Divide carrot, lemon, red pepper, and shallots between steaks. Season steaks and vegetables with lime juice, salt and pepper. Sprinkle with basil and top with butter pats.
Seal foil to create packages around the steak and vegetables.
Place packages on grill. Cook for 20 minutes.
