Bake 12 potatoes until just done. While hot, cut the tops off of each potato. (about 1/4") Let cool a little bit and use a grapefruit knife, scoop out the potato, leaving about 1/8" of potato around the edges to give some body to the potato. Mash potato with an electric mixer adding the following ingredients:1- 8 oz. package cream cheese, 1 cup sour cream, 4 T. butter, 3/4 teaspoon garlic salt. Top with shredded cheddar cheese and finely chopped green onions. Refrigerate until you are ready to reheat them. Heat at 350 degrees for 30-40 minutes. Serve immediately. These take a little time, but they are definately worth it! A nice way to serve potatoes -- can do ahead of time and very special!
