What could be easier than this? Micro-waved AND frozen.I have made this many times when kiwi is on sale. It's very good AND pretty too. Also jells well. I freeze it in jelly jars with canning lids.

MICRO-WAVE KIWI JAM for the freezer.

1-1/4 lb. kiwi fruit
1/4 cup lemon juice [use fresh]
1/2 cup water
1 pkg. [1-3/4 oz.]powdered pectin
4 cups sugar

Peel fruit with vegetable peeler. Slice fruit into 4
quart micro-wave safe bowl and mash coarsely with fork or potato masher. Add lemon juice, water and pectin; blend well. Cook on HIGH 10 minutes stirring every 3 minutes. Stir in sugar. Cook on HIGH 6 minutes, stirring every 2 minutes. Skim foam off top and ladle into clean, hot jars; cover with lids and let cool. Refrigerate or freeze. Makes 5 half pint jars.
