I tried this recipe out of "The Book of Preserves" by Mary Norwalk:

Mixed fruit ( strawberries, cherries, apricots plums, redcurrants, grapes or melon)

Sugar, equal to weight of fruit ( example: 1 lb cherries + 1lb sugar)

Light or dark Rum ( I used spiced rum )
(I think any alcohol thing will work )

Wash jar(s) and lids in hot soapy water, rinse. Do not use citris fruits or bananas, apples or pears. Do not peel or pit fruit, only melon should be peeled seeded and cut.
Layer fruit, then sugar, fruit then sugar in jar- pour over fruit and seal jar tightly. Let mature in cool dark place for 3 months.
