Here's a real time saver for the peach pie lover. When peaches are fresh, make your pies for all winter. Boil water in a large pan, ently place peaches in to loosen the peels. Immediately put in cold water. Peel off skin. Slice peaches. Make your favorite peach pie recipe. Mine is: Put 4 cups of freshly sliced peaches in a bowl. Add 1 cup of sugar, 1/3 cup of flour (less 1 tablespoon), and 1 teaspoon of cinnamon. Mix well. Line your pie plate with wax paper. Fill the lined pie plate with your pie mixture. Set the pie plate, with pie mixture in the freezer for several hours. When frozen, lift pie filling out of pie plate and wrap in freezer bag for storage. Now, whenever you are hungry for peach pie, just line your pie plate with dough, lift the pie mixture from the freezer, remove the wax paper and insert the frozen peach pie filling into the dough. Add your top crust and bake as usual (425 for about 1 hour). Enjoy fresh peach pie anytime.
