I have made this just this past week. It taste just like Hienz Chilli Sauce. The only thing I did different was I added a can of tomatoe paste. I found that this gave a better consitancy.

Chili Sauce

22 cups Peeled tomatoes (10lbs/4.5 kg)
6 cups Chopped onions
2 cups chopped sweet red peppers
2 cups Sweet green pepper
1 1/2 cups chopped celery
4 cups Granulated sugar
2 1/2 cups White vinegar
2 T Pickling salt
1 t Cinnamon
3/4 t Ground ginger
1/2 t each Ground cloves, allspice and cayenne
In large heavy stainless steel or enamel saucepan, combine tomatoes, onions, red and green peppers and celery; stir in sugar, vinegar, salt, cinnamon, ginger, cloves, allspice and cayenne pepper. Bring to a boil reduce heat and simmer stirring often, for about 2 hours or until tomatoes are broken down enough to make a thick sauce.

Fill sterilized canning jars; leaving ½ headspace. Seal with prepared lids; transfer to boiling bath. Pour in enough simmering water to come 2 inches above the jars. Cover and bring to boil. Boil for 15 min. Transfer racks; let cool. Check seals. Wipe, label and store in cool dark, dry place. Makes 16 cups.
