I received lots of beautiful fresh red and yellow tomatoes last weekend. They were very ripe so I made a quick sauce out of them. I will use this as a base to my spaghetti sauce. I just corsely chopped tomatoes (skins and seeds included), finely chopped onion, lots of finely chopped garlic, hot seasoning (hot peppers or sauce, etc.), sugar, salt and a touch of cider vinegar. Let it stew for about 1 hour until the tomatoes were well mushed. I bottled some and froze a couple of batches. When I am making spaghetti sauce I will add this along with meat (optional), fresh quartered mushrooms, green/red peppers, grated carrot, grated zuchinni, red wine, oregano (lots of it), paprika, celery salt, basil, and freshly grated parmesan cheese. Let is simmer the day away, and voila and great tasting spaghetti sauce. Sorry I don't use measurements, it is usually done by taste unless following a new recipe for the first time.
