STAINED GLASS DESSERT CAKE
1 pkg. vanilla wafers crushed 1/2 cube butter 3 tsp. sugar 1 pt. whipping cream 1 pkg. unflavored gelatin 1 1/2 Tbsp. hot water 1 c. pineapple juice 3 pkg. gelatin (assorted flavors and colors) 1 3/4 c. water for each
Make the 3 flavored gelatins a day ahead of time so that they can jell overnight before using. Mix each one separately with 1 3/4 cups of water and refrigerate. To assemble the cake, crush vanilla wafers and mix with melted butter and sugar. Put half of crumbs in bottom of angel food cake pan. Save rest for top. Dissolve unflavored gelatin in hot water; add pineapple juice and bring to boil. Cool. Beat whipping cream, adding sugar to taste. Cut 3 flavored gelatins into small squares or cubes and mix with whipping cream. Add cooled pineapple juice-gelatin mixture. Pour into angel food cake pan over crushed vanilla wafers. Sprinkle remaining crumbs on top. Refrigerate 24 hours. To serve, invert on plate and slice.
