CHRISTMAS LIZZIES
1 pound golden raisins
1/2 cup bourbon
1 pound candied cherries, cut in half
1 pound pecans, chopped
1 pound candied pineapple, chopped coarse
1/2 cup margarine, softened
1 cup brown sugar
4 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1/4 teaspoon ground cloves
Soak raisins overnight in bourbon.
THE NEXT DAY:
Preheat oven to 350 degrees F. Grease cookie sheets.
In a large bowl combine the soaked raisins (with the bourbon), cherries, nuts, and pineapple; set aside.
Cream together the margarine and brown sugar, beat in eggs, one at a time until smooth. Add margarine mixture to the fruits and blend well; set aside.
In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg, salt, and cloves. Gradually beat into the margarine/fruit mixture. When completely incorporated, drop heaping tablespoons onto prepared cookie sheets, leaving 1 inch between cookies.
Bake in a preheated 350 degree oven for 20 minutes or until golden brown. Cool on wire racks.
Makes about 4 dozen
