SUGAR COATED MATZOH
6 matzo oil (for frying) FOR THE SYRUP: 1 1/2 cups sugar 1 cup water 1 medium lemon, juiced 1/2 teaspoon ground cinnamon
Sprinkle the matzoh with a little water. Do Not Soak. Wrap with a damp towel.
Cut each matzo into quarters and deep fry each piece until golden on both sides. Drain on paper towel.
Heat the sugar, water and the lemon juice for 30 minutes on medium heat.
Add the dried matzoh to the syrup and cook for 2 minutes more.
Remove with slotted spoon spread the matzoh on a cookie sheet and sprinkle with some cinnamon and allow to cool.
