I am looking for a recipe for Christmas Cookies that my mother used to make, but the recipe has been lost. The dough was made from mashed potatoes. Then we refridgerated the dough, cut the cookies into circles, and put some raspberry jam in between two circles (they look JUST like linzer tarts, but are made with poato dough). If anyone has ever seen this before I would be very appreciative.
