Gingerbread Muffins! 3 Tablespoons Crystallized Ginger - Minced 2½ teaspoons Ground Ginger ¾ cup Dark Molasses 2¼ cups All-purpose Flour ¾ cup Fruit Puree ¼ cup Oil ½ cup Nonfat Plain Yogurt ½ cup Brown Sugar - Firmly Packed ½ cup Ground Cloves 1½ teaspoons Baking Powder ½ teaspoon Baking Soda 2 teaspoons Ground Cinnamon 1 large Egg 1 Egg White ~ Topping ~ 1 Tablespoon Crystallized Ginger - Minced ¼ cup All-purpose Flour ½ teaspoon Ground Cinnamon 1 Tablespoon Oil 3 Tablespoons Brown Sugar Preheat oven to 375ºF and spray 12 muffin cups with vegetable spray. Muffins: In large glass bowl, whisk egg, egg white and brown sugar until smooth. Add yogurt, molasses, oil, fruit puree, and crystallized ginger and mix well. Slowly add baking soda, baking powder, ground ginger, cinnamon, cloves and flour and mix just until blended. Pour into muffin cups and sprinkle with topping. Bake for 20 minutes. Each muffin is about 300 calories with 6 grams of fat. Topping: Mix flour, ginger, brown sugar and cinnamon. Add oil and mix until crumbly.
