BJ - You're terrific! I can't wait to try using pureed tofu as an egg substitute. Is the Fleishman's margarine that you use one of the dairy-free ones? I know Fleishman's does have a dairy-free version, but didn't know it could be used successfully as a substitute for butter for baking. (Apparently some of the dairy-free ones are not suitable substitutes because they contain extra water.)

I'll give the whole wheat sugar cookies a try--I'm sure I can substitute "Rice Dream" or just water for the 2 TBS milk. Unfortunately, the chocolate chips contain milk products, so we'll have to pass on those. I do have a good egg- and milk-free gingerbread cookie recipe, but if you have any others that can be adapted to a dairy-free, egg-free recipe, I'd love to have them.
