Hi Kay, I use Fleischman's Unsalted margarine which is dairy free and have had great success baking with it. There is also Canoleo available at our health store that bakes up fine. We use Rice Dream milk or soymilk in recipes that say "milk". I use semi-sweet choco chips in Canada and the ones I use have no dairy in them. Just lucky I guess. I bought a cookie press at a garage sale in the summer and made spritz cookies on Friday. Two more recipes for you.
Oatmeal Macaroon Cookies
1 c. dairyfree margarine,not diet 1 c. sugar 2/3 cup brown sugar 1/4 c. pureed soft tofu 2 1/2 cups quickoatmeal 1 c. flour 1 c. coconut 1/2 tsp. salt 1 tsp. vanilla 1/2 tsp soda dissolved in 2 T. hot water
Mix together and drop on ungreased cookies sheet and bake in 425 oven. Watch carefully, they can burn easily. Takes about 9-10 minutes. Removes while they still look gooey but set. Let sit a minute before removing from pan.
Sweet and easy Sugar cookies
2 cups dairyfree margarine,not diet 2 cups brown or white sugar 1/2 cup soft tofu, pureed 4-5 cups flour 4 tsp. cream of tartar 2 tsp. baking soda 1 tsp. vanilla
Cream margarine and sugar. Add vanilla and tofu. Combine flour,cream of tartar, baking soda. Beat into creamed mixture. Refrigerate then roll, cut and bake at 350 until lightly brown on edges. Makes lots.
